 Tasting Notes

•  Appearance: A smouldering amber glow reminiscent of a Highland fire’s dying embers. 
• Nose: Opens with smoky warmth featuring heather, charcoal, and cinnamon-spiced toffee, followed by flamed orange peel and caramelized walnut brittle. Subtle layers of star anise, red apple, and stewed fruit weave through toward more austere dried goji berries and smoked meat. 
• Palate: Medium-bodied yet richly textured think raisin and honeyed walnut merging with bramble ganache, smoked chocolate fudge, and an echo of earthy oak. Gentle peat smoke is beautifully integrated, accented by candied ginger, dates, and charcuterie oils. 
• Finish: Long and indulgent. Dark berries, smoked liquorice, cocoa, and a wisp of ginger ash linger, while a gentle rancio of prunes, burnt orange peel, and honeyed malt sweetness slide gracefully into the close.
